Produced from the Yabukita cultivar grown in a field covered for 10 days before harvest to develop a more mellow flavor than traditional Japanese Sencha (not covered from the sun before harvest). Its leaves have a beautiful thin needle shape and a dark, glossy green color. The Yabukita cultivar is used for 80% of all Japanese green teas and is especially suited to produce very balanced Sencha teas, revealing both a well-rounded umami and a refreshing vegetal flavor.

Sencha is best brewed in a small, preheated teapot and with full attention.
You can brew several times on the same leaves, adjusting the water temperature and brewing time.
Below a suggestion for brewing this tea, but please experiment and find your own favorite cup.Use 6-8g for 200 ml water.
1. brew: water 60-70°C / 40 sec.
(for a subtle astringency try a higher temperature)
2. brew: water 85°C / pour immediately
