Organic Summer Sayamakaori

This single-cultivar black tea is made from the Sayamakaori cultivar, grown by Mr. Harashima in Yame. The leaves are cultivated without shading and hand-harvested in mid-June, then undergo a careful process of wilting and fermentation to develop their subtle, refreshing flavor.

Kōcha (black tea) is best brewed in a small, preheated teapot and with full attention.
You can brew twice on the same leaves, adjusting the water temperature and brewing time.
Below a suggestion for brewing this tea, but please experiment and find your own favorite cup.
Use 5-6g for 200 ml water.
1. brew: water 95°C / 180 sec.
2. brew: water 100°C / 20 sec. -
