Organic Seian Matcha is a rare and precious first flush tea grown in the shade in Fushimi Ku, Kyoto by Mr Nakanishi.

The tea is grown under a double layered cover for up to 35 days before harvest. When the second cover goes up, 95% of the sunlight is blocked. As a result, the shaded leaves remain small and soft, while accumulating increased levels of amino acids (L-Theanine) that are responsible for the mellow, savory umami flavor, that is sought after in Japanese teas.

The youngest, most tender leaves are hand-picked in spring and processed immediately; steamed, dryed and stems and rough matters removed. Then the tea is stored in refrigerators in its Tencha state (whole tea) before being ground on original stone mills. The result of this carefully controlled process is a finely ground, vibrant green powder suitable both for the preparation of Usucha (thin tea), and Koicha (thick tea) without any bitterness.

  • Use 2g / 100 ml water / 80°C

    Bring 100 ml of water to a full boil

    Pour hot water in to your chawan (matcha bowl) and soak your chasen (bamboo whisk)

    Dry of your chawan and add the sifted matcha powder to your chawan.

    Once the water has cooled to around 80°C, pour it over the matcha powder.

    Using your wrist, whisk the tea to produce a fine froth.
