Organic Sencha Yabukita from Mr. Nishi in Makizono, Kagoshima. The name Seiryu, meaning “clear stream,” reflects the clean and refreshing character of this tea and its true expression of classic Japanese sencha. Yabukita is the most widely used tea cultivar in Japan and is especially cherised for producing balanced sencha with both a rounded umami and fresh vegetal notes.

Produced from the Yabukita cultivar, the tea is made from leaves that have been shade grown for 10 days before harvest, resulting in a softer and more mellow flavour compared to traditional unshaded sencha. The leaves have a fine needle shape and a deep glossy green colour.


In the cup: deep savoury notes with mellow sweetness when brewed at lower temperatures, developing a light astringency and more pronounced vegetal profile at higher temperatures.

Sencha is best brewed in a small, preheated teapot and with full attention. You can brew several times on the same leaves, adjusting the water temperature and brewing time.

Below a suggestion for brewing this tea, but please experiment and find your own favorite cup.

Use 6-8g for 200 ml water.
1. brew: Water 70°C / 60 sec.
2. brew: Water 75°C / pour immediately
3. brew: Water 80-90°C / pour immediately
