A refined organic single-cultivar sencha from Yame, produced by Mr. Harashima, a 3rd-generation tea producer in a region where tea has been cultivated for more than 600 years.

The tea is made from the first early May harvest of the Kirari31 cultivar, lightly shaded before harvest to develop a softer texture and deeper sweetness. Kirari31 is known for its vibrant green colour, smooth umami, and elegant aromatic profile.

In the cup: a deep green tea with rich umami, gentle sweetness, and soft vegetal notes, balanced by a clean and refreshing finish.

Sencha is best brewed in a small, preheated teapot and with full attention. You can brew several times on the same leaves, adjusting the water temperature and brewing time.

Below a suggestion for brewing this tea, but please experiment and find your own favorite cup.

Use 6-8g for 200 ml water.
1. brew: Water 70°C / 60 sec.
2. brew: Water 75°C / pour immediately
3. brew: Water 80-85°C / pour immediately
