Dattan Sobacha is a Japanese buckwheat tea. It is a delicate, golden tea made from roasted buckwheat seeds sourced from Hokkaido, Japan. Carefully grown and crafted without the use of chemicals or pesticides, this tea offers a perfect balance of natural sweetness and rich, toasty flavors.

“Dattan” refers to a specific type of buckwheat that has a slightly stronger flavor and a significantly higher content of rutin, an antioxidant known for its anti-inflammatory and cardiovascular benefits.

Sobacha is best brewed in a small, preheated teapot and with full attention. You can brew twice on the same leaves, where the second brew will be a little lighter.

Below a suggestion for brewing this tea, but please experiment and find your own favorite cup.

Use 8g for 300 ml water.
1. brew: water 100°C / 120-180 sec.
2. brew: water 100°C / 60 sec.
